On the nose and palate you get toasted oak, vanilla, warm caramel, dark chocolate and dried fruit with a hint of baking spice and gentle smoke, all balanced by agave sweetness. It pairs beautifully with the complex, savory-sweet layers of Mole negro, where the tequila’s cocoa and spice notes echo the sauce, and with Aged Manchego, whose nutty, salty profile is lifted by the tequila’s oak and caramel tones.
